We are taking orders for goats that will be butchered in the fall. Whole or half animals are $4.75 per pound hanging weight, including custom processing.
Pastured Poultry
These are old-fashioned, endangered heritage breeds, fed slowly and raised out on pasture. That means they are very lean and very flavorful. If you haven’t had free-range birds before, they’ll be much more flavorful than any you’ve ever tasted. Because they eat mostly grass, the meat is very high in omega-3s and absolutely free of the antibiotics and other medications necessary to raise birds in confinement. In addition, we feed our birds all organic locally-milled grains. When you eat this poultry, you’re not only treating yourself to some of the best cuisine around, you are also supporting the preservation of older breeds who’s genetics are currently in danger of being lost. This year we are growing heritage White Rock chickens and rare Bourbon Red turkeys. These are the same turkeys Barbara Kingsolver raised and wrote about so memorably in “Animal, Vegetable, Miracle.” Our black ducks are rare Cayugas – pretty, too! Worried about fitting all you want in your freezer? In terms of storing meat, a rule of thumb is one cubic foot of freezer space holds 35-40 pounds of cut and wrapped meat. We find that in a good chest or upright freezer, frozen cuts stay delicious for over a year.
